How to make a small amount of bacon go a long way!
Ingredients:
8 large Potatoes
1 Tablespoon of Oil
Water to cover Potatoes
Salt and Pepper
1 Egg
3 rashers of Bacon, fried and diced
1/3 cup Corn kernels
1/2 cup grated Cheese
1 Tablespoon of Tomato Relish or sauce
Method:
Scrub the potatoes and put in a large saucepan with cold water. Bring to the boil and boil until tender.
Take out of water and let partly cool.
Cut in half lengthways and scoop out as much potato as you can without breaking the skins.
Dip skins in olive oil and place on a baking tray. Sprinkle with cooking salt. Bake in a hot oven 220 degrees C until crispy.
Mash the leftover potato with a little milk and mix well with egg, cheese, bacon, and relish. Season with salt and pepper.
Take skins from the oven, fill with stuffing and bake for 15 minutes.
Serve hot with salad and enjoy!
